3 bunches scallions
20 sheets Spring roll dough sheet (from an Asian Market)
1 egg yolk
vegetable oil (for frying)
For the salsa
1 Papaya
Juice of 1 Limes
brown sugar
1 tsp Sambal oelek
1 pinch salt

Preparation steps

For the spring rolls, rinse and trim the scallions. Cut the white part into finger-length pieces. Spread out the spring roll sheets and brush with egg yolk. Lay a piece of scallion on each and roll up tightly. Fry in hot oil until golden brown. Drain on absorbent paper.

For the salad, halve the papaya, remove the seeds, peel and dice finely. Stir the lime juice with sugar, sambal and salt and mix with the papaya cubes. Serve the spring rolls with salsa on plates.
