- 1 carrot
- 120 grams softened butter
- 4 eggs
- 1 pinch salt
- 120 grams Pastry flour
- 350 milliliters milk
- 2 Tbsps finely chopped Fresh herbs (such as parsley and chives)
- 150 grams grated Cheese (such as Bergkäse)
- salt
- freshly ground peppers
- freshly grated Nutmeg
- vegetable oil (for greasing the waffle iron)

Preparation steps
1.
Peel and finely grate the carrots.
2.
Beat the butter until fluffy, then add the eggs one at a time, mixing well after each addition. Stir in the flour, milk and chopped herbs and mix until smooth. Fold in the grated cheese and carrots and season with salt, pepper and nutmeg. Let stand for about 30 minutes.

Heat the waffle iron to medium heat and brush lightly with oil. Spoon 2-3 tablespoons of the batter into the waffle iron and cook until golden brown. Cover the cooked waffles with aluminum foil to keep warm and repeat with the remaining batter.
4.
Serve with sour cream or yogurt, if desired.
