For the herb cream
Herb quark
2 garlic cloves
250 grams Quark
100 grams Natural yogurt
3 Tbsps mixed, chopped Fresh herbs (such as parsley, basil, chervil, thyme, mint, chives or dill)
salt
freshly ground peppers
1 splash lemon juice
For the waffles
3 eggs
200 grams Pastry flour
1 pinch salt
1 generous pinch Baking powder
300 milliliters milk
1 handful baby Spinach
vegetable oil (for greasing the waffle maker)

Preparation steps

1.

For the herb quark, peel and mince the garlic. Mix together the quark, yogurt, garlic and herbs. Season with salt, pepper and a dash of lemon.

For the waffles, separate the eggs. Mix the yolks with the flour, salt, baking powder and milk. Let sit for 20 minutes.

3.

Rinse, trim, spin dry and chop the spinach. Stir the spinach into the batter. Whip the egg whites and fold into the batter.

4.

Heat the waffle iron and lightly grease. Spoon the batter into the waffle iron and cook until golden brown. Continue with the remaining batter. Serve with herb quark dolloped on top of the waffles.
