Ingredients

3 eggs (separated)
salt (to taste)
3 ½ Tbsps butter (melted)
freshly ground Black pepper (to taste)
1 pinch Nutmeg (freshly grated)
1 cup all-purpose flour
¾ cup Sour cream (plus 2 tablespoons)
2 Tbsps fresh, chopped Fresh herbs (such as dill, chives, parsley, etc.)
non-stick cooking spray (for waffle iron)
In Addition
2 carrots (peeled)
1 Kohlrabi (peeled)
4 Radish (peeled and sliced)
1 red pepper (rinsed)
1 yellow pepper (rinsed)

Preparation steps

1.
Preheat oven to 250º F (to keep waffles warm). Preheat waffle iron.
2.
In a bowl, beat the egg whites with a pinch of salt until stiff. Add the egg yolks, melted butter, pepper, and nutmeg; beat until mixture is frothy. Add the flour and sour cream. Fold in the beaten egg whites and chopped herbs.
3.
Coat hot waffle iron lightly with nonstick cooking spray. Pour batter into each waffle mold.
4.
Cook waffles according to manufacturer's instructions until cooked through and golden brown, approximately 3 to 4 minutes.
5.
Transfer cooked waffles to rack in oven to keep warm, do not layer. Repeat until all the batter has been used.
6.
Slice the carrots, kohlrabi, and radishes into thin sticks. Halve and trim the peppers and cut into thin sticks.
7.
Serve waffles with vegetables sticks.
