- 800 grams floury potatoes
- 1 stalk Leeks
- 2 Parsnips
- 2 carrots
- ½ Celery root
- 100 grams Smoked bacon
- 2 onions
- 2 Tbsps clarified butter
- 2 Cooked sausages (such as Wiener, Debreziner)
- 1 l Beef broth
- 2 garlic cloves
- 1 bay leaf
- ¼ tsp Caraway

- 125 milliliters Whipped cream
- 1 bunch Chives

Preparation steps
1.
Peel the potatoes, leeks, carrots, parsely root and celery. Rinse and cut everything in cubes.
2.
Cut the bacon into small cubes. Peel and finely chop the onions.
3.
In a large saucepan, heat the butter. Saute the onions and bacon until crispy. Remove from the pan and set aside.

Put the potatoes and vegetables in the pan. Pour in the broth and saute. Add the spices and simmer covered for 30 minutes on low heat. Remove the bay leaf and a ladle full of vegetables. Puree the rest of the vegetables. Replace the vegetables in the soup and season with salt and pepper.

Heat a little salt water. Allow the sausage to warm. Cut into slices.
