Potato Soup with Carrots and Sausages
Peel potatoes, carrots, onions and garlic. Cut potatoes and carrots into large cubes, cut onions and garlic into small cubes.
Heat oil in a saucepan and saute carrots, onions and garlic for a few minutes. Add broth and potatoes and season with salt and pepper. Add bay leaf, cover and simmer, stirring occasionally, for about 30 minutes on low heat.
Add sausages to the soup, remove bay leaf and let stand for 10 minutes. Season with salt, pepper, vinegar and cayenne pepper. Sprinkle with parsley and serve.
