50 grams Pastry flour
4 garlic cloves (thinly sliced)
8 Tbsps vegetable oil
4 eggs
600 grams small, new potatoes
500 grams Spinach
150 grams black Olives

Preparation steps

Soak salted fish in cold water for at least 24 hours, changing water often. Drain and pat dry and roll in flour. Heat 4 tablespoons oil in a pan and fry fish and garlic on each side and place in a steamer. Place steamer over a pot with about 2 cm (approximately 3/4 inches) boiling water and cover and steam for about 50-60 minutes.

Cook eggs in boiling water until hard-boiled and set aside to cool. Scrub potatoes, rinse and drain and cook in boiling, salted water for about 25 minutes, until tender.

Rinse spinach and spin dry and fry in remaining oil, stirring frequently. Season spinach with salt and pepper.

To serve, cut fish crosswise into thick slices. Arrange fish, potatoes, spinach, olives and peeled, hard-boiled eggs on a plate.
