- 350 grams Salmon
- 1 Tbsp black peppercorns
- 4-5 tablespoons soy sauce
- 50 ml or 1.7 ounces of coconut milk and Mirin
- juiced Limes
- 10 Kaffir lime leaves
- 500 grams white Asparagus
- 200 grams Rice noodles
- 4 Tbsps vegetable oil
Preparation steps

Cut salmon into bite-sized pieces. Crush black pepper with a broad knife or in a mortar. Roll salmon in pepper. Drizzle salmon with 1 tablespoon of soy sauce.

Combine coconut milk, mirin, lime juice and remaining soy sauce. Thinly slice lime leaves.

Trim and rinse asparagus, then cut into pieces. Bring a large pot of salted water to boil. Add noodles and asparagus and cook for 4 minutes. Pour through a sieve and drain.

Heat vegetable oil in a wok. Add salmon and cook for 1 minute. Remove and keep warm. Pour out excess oil. Add asparagus and noodles, then deglaze with sauce and stir. Add lime leaves and salmon. Season with salt and soy sauce, then serve.
