- 7 ozs Rice noodles
- 2 Tbsps dried shrimp (optional)
- 4 Tbsps Nut oil
- 2 cloves garlic cloves (chopped)
- 1 green chili pepper (deseeded and finely chopped)
- 1 carrot (cut into thin strips)
- fresh ginger (chopped)
- 3 ½ ozs Mushrooms (sliced)
- 9 ozs raw tiger shrimp (peeled)
- 8 scallions (chopped)
- 1 Tbsp sesame oil
- 2 Tbsps Fish sauce
- Lime juice (from one lime)
- 1 ¾ ozs chopped Peanuts
- Limes (to garnish)

Preparation steps
1.
Soak the noodles in boiling water according to the packet instructions. Rinse, drain well and set aside.
2.
Meanwhile, soak the dried shrimps in a little hot water for about 10 minutes.
3.
Heat the groundnut oil in a large frying pan or wok until very hot then stir fry the garlic and chilli for 2 minutes. Add the carrot, ginger, mushrooms and prawns and cook for 2 more minutes, stirring all the time.
4.
Add the noodles, spring onions, sesame oil, fish sauce and lime juice and continue stir-frying for 2-3 minutes or until the noodles are warmed through. Serve with the peanuts scattered over and the lime slices alongside.
