7 ozs Rice noodles
2 Tbsps dried shrimp (optional)
4 Tbsps Nut oil
2 cloves garlic cloves (chopped)
1 green chili pepper (deseeded and finely chopped)
1 carrot (cut into thin strips)
fresh ginger (chopped)
3 ½ ozs Mushrooms (sliced)
9 ozs raw tiger shrimp (peeled)
8 scallions (chopped)
1 Tbsp sesame oil
2 Tbsps Fish sauce
Lime juice (from one lime)
1 ¾ ozs chopped Peanuts
Limes (to garnish)

Preparation steps

1.
Soak the noodles in boiling water according to the packet instructions. Rinse, drain well and set aside.
2.
Meanwhile, soak the dried shrimps in a little hot water for about 10 minutes.
3.
Heat the groundnut oil in a large frying pan or wok until very hot then stir fry the garlic and chilli for 2 minutes. Add the carrot, ginger, mushrooms and prawns and cook for 2 more minutes, stirring all the time.
4.
Add the noodles, spring onions, sesame oil, fish sauce and lime juice and continue stir-frying for 2-3 minutes or until the noodles are warmed through. Serve with the peanuts scattered over and the lime slices alongside.
