- 750 grams Salmon (skinless)
- 2 ripe Quince
- 250 grams Pearl onion
- 1 Tbsp butter
- 100 milliliters dry white wine
- Sea salt
- 2 Tbsps olive oil
- peppers (roughly pushed)
- 2 Tbsps Maple syrup

Preparation steps

Rinse salmon, pat dry and cut into 4 pieces. Rinse quinces, quarter, core and cut into thin columns. Peel onions and fry in hot butter with quince slices until golden brown for 2-3 minutes. Add white wine, cover and stew for about 15 minutes. Season with salt.

In a non-stick pan, cook salmon on both sides in hot oil until golden brown, about 1 minute. Drizzle maple syrup over salmon and remove from heat. Soak salmon in syrup for a few minutes, if desired. Season with salt and pepper and serve with onion-quince mixture.
