Red pepper flakes

300 grams instant Couscous
2 Tomatoes
1 red Bell pepper
1 yellow Bell pepper
2 garlic cloves
2 Tbsps freshly chopped Peppermint
2 Tbsps freshly chopped parsley
1 lemon (juice)
6 Tbsps olive oil
salt
parsley (for garnish)

Preparation steps

1.

For couscous, rinse tomatoes, cut into quarters, remove seeds and finely dice. Rinse bell peppers, halve, remove seeds and ribs and finely dice. Peel garlic and very finely chop.

Cook couscous according to package directions. Fluff with a fork and allow to cool. Mix together cooled couscous with chopped vegetables and chopped herbs in a large bowl. Add Lemon juice and olive oil and season with salt and pepper.

3.

Rinse pork loin, pat dry and cut into 8 equal slices. Season with salt and pepper flakes. Sauté in hot oil on each side for 1 to 2 minutes.

4.

Place couscous salad on plates, top with a slice of meat and serve garnished with parsley.
