- 3 ½ lbs Roasted pork (with rind)
- 4 onions
- 4 Apple
- 7 ozs dried Apricot
- 2 garlic cloves
- 2 Tbsps honey
- ½ tsp Juniper berries
- ½ tsp thyme (dried)
- ½ tsp peppercorns
- salt
- 5 ozs Beef broth
Preparation steps
1.
Rinse pork, pat dry and cut a diamond pattern into the rind.

Peel the onions and garlic, coarsely chop.
3.
Peel apples, quarter, core and cut into wedges.
4.
Coarsely chop apricots.
5.
Crush juniper, thyme and peppercorns in a mortar and mix with melted honey.
6.
Fill the oven bag with onion, apples, apricots and garlic as directed, add meat, season meat liberally with salt, pour in bouillon and brush the rind with the honey-spice mixture. Seal bag and prick several times.
7.
Roast in the oven at 350°F for about 90 minutes. Let meat rest before serving.
