- 500 grams white Asparagus
- 1 bunch Radish
- 150 grams Snow peas
- 1 bunch Chives
- 4 Tbsps white balsamic vinegar
- 2 tsps Mustard
- 2 tsps medium hot Mustard
- salt
- peppers
- sugar
- 4 Tbsps Canola oil
- 150 grams Roast beef cold cut
Preparation steps
1.
Peel the asparagus and trim the woody ends. Cut off the tips and slice the rest into thin diagonal slices.
2.
Rinse the radishes and snow peas and cut into slices. Slice the chives.
3.
In a bowl, whisk the vinegar with the 2 mustards, and season with salt, pepper and sugar to taste. Whisk in the oil until emulsified.
4.
In a bowl, stir the asparagus tips with the asparagus slice, radishes, snow peas, chives and dressing. Serve with the roast beef.
