Roast Beef with Asparagus
Season the roast beef with salt and pepper and brown in oil on all sides. Bake in an oven preheated to 140°C, top and bottom heat, on the middle rack for about 30 minutes, or until still pink throughout.
Peel the bottom half of the asparagus and sauté in 2 tablespoons butter, deglaze with broth, season with salt, pepper, thyme and nutmeg, cover and simmer about 10 minutes.
Rinse the tomatoes and cut into slices, then saute in 1 tablespoon melted hot butter and season with salt and pepper.
