- 2 Whole Wheat Toasts (sliced in half horizontally)
- 2 Tbsps Mayonnaise
- ¼ cup shredded, red Cabbage
- ¼ cup shredded carrots
- ½ small Red onion (peeled and thinly sliced)
- ¼ cup Baby spinach
- 4 slices deli Roast beef
- salt (taste)
- freshly ground Black pepper (to taste)

Preparation steps
1.
Spread a thin layer of mayonnaise on the cut sides of each roll. Layer cabbage, carrots, onion, spinach and 2 or 3 slices of roast beef on the bottom half of each roll. Season with salt and pepper and top with the remaining half of the bread roll. Serve.
