Shrimp Beef and Chocolate-dipped Roast Beef Rolls

- 4 Chateaubriand steaks (thick center-cut beef)
- 3 Tbsps vegetable oil
- salt
- freshly ground peppers
- 8 large shrimp
- 8 slices rare deli Roast beef
- 30 grams dark Chocolate
- 4 long Romano beans
Preparation steps
Form chateaubriand steaks into rolls and tie with kitchen twine.
Cook runner beans in boiling salted water for 10 minutes. Drain beans, rinse, pat dry and cut in half lengthwise.
Preheat oven to 200°C (approximately 400°F). Heat 2 tablespoons oil in an ovenproof pan and quickly sear steak rolls on all sides. Remove pan from heat, season steak rolls with salt and pepper and bake about 5 minutes.
Rinse shrimp, pat dry and sauté in remaining oil for 4-5 minutes.
Coarsely chop chocolate and melt over a hot-water bath. Roll up slices of roast beef and fasten with halved beans. Briefly dip ends of roast beef rolls in melted chocolate.
To assemble the shrimp beef rolls, cut steak rolls in half horizontally and place a shrimp on each lower half. With a sharp knife, make crosswise cuts in the top of the top halves and insert a shrimp in each top half. Replace top halves of steak rolls on the bottom halves. Serve shrimp steak rolls with the chocolate-dipped roast beef rolls and garnish as desired.
