- 800 milliliters Beef broth
- 3 small onions
- 2 Tbsps olive oil
- 2 Tbsps butter
- 250 grams Arborio rice
- 150 grams Whipped cream
- 4 Tbsps Parmesan (grated)
- ½ lemon (zest and juice)
- salt
- peppers
- 4 slices cured ham
- Parmesan (shaved, for garnish)
Preparation steps

Bring broth to a boil in a small pot, then reduce heat and keep warm. Peel onion and finely dice. Heat olive oil and butter in a pot over medium heat and sauté onion. Add white wine and cook, stirring, until evaporated. Ladle in about 1/4 of the hot broth and cook, stirring frequently, until almost all liquid is absorbed. Continue to add broth in this manner and cook until rice is al dente, about 20 minutes, stirring frequently.

Stir in cream, grated Parmesan, lemon juice and lemon zest. Season with salt and pepper. Garnish with sliced ham and shaved Parmesan.
