1 shallot
1 garlic clove

250 grams Arborio rice
900 milliliters Vegetable broth
100 grams cooked ham
300 grams mixed Mushrooms (to taste)
40 grams freshly grated Parmesan
100 grams Natural yogurt
salt
freshly ground peppers
2 Tbsps scallions

Preparation steps

1.

Peel shallot and garlic and chop finely. Heat 2 tablespoons of oil in a pan and saute shallot and garlic until soft. Add rice and saute briefly. Add hot broth and cook rice, stirring frequently, until almost all liquid is absorbed. Continue to add broth in this manner and cook until rice is al dente, about 20 minutes, stirring frequently.

Cut ham into cubes.

Clean mushrooms, cut into smaller pieces, if needed.  Heat 2 tablespoons of oil in a pan and saute mushrooms for a few minutes, season with salt and pepper.

Mix ham with mushrooms. Add Parmesan and yogurt to risotto, season and arrange in bowls. Sprinkle with chopped chives and top with bacon and mushroom mixture. Serve.
