- 2 Tbsps olive oil
- 4 Red onions (sliced)
- 6 ⅔ cups baking potatoes (finely chopped)
- 1 bay leaf
- 1 ⅔ cups vegetable stock
- 2 Tbsps fresh Basil (chopped)
Preparation steps
1.
Heat the oil in a pot and fry the onions and potatoes for a couple of minutes. Season with salt and ground black pepper and add the bay leaf.

Pour in the stock and simmer covered for 20 minutes.
3.
Serve sprinkled with basil.
