- 2 pumpkin seed rolls
- 200 grams Pumpkin (peeled and seeded)
- 2 scallions
- 1 Tbsp sunflower oil
- 1 tsp ground paprika (sweet)
- Red pepper flakes
- lemon juice
- 1 Tbsp Parmesan
- 1 Tbsp parsley (chopped)

Preparation steps

Cut pumpkin rolls in half.

Cut pumpkin into small cubes.

Rinse, trim and cut scallions into thin rings. Cook in hot oil, add pumpkin, cook briefly and then deglaze with a little water. Add paprika and cover. Simmer over low heat for 5 minutes. Pumpkin should remain intact. Remove from heat, stir in Parmesan and parsley and season with lemon juice and chile flakes. If desired, toast sliced sides of buns. Spread pumpkin mixture on bottom half of bread, place on top bun and serve.
