- 12 stalks green Asparagus (or white asparagus)
- 1 Tbsp good-quality olive oil
- salt (to taste)
- freshly ground Black pepper (to taste)
- 1 sheet frozen Puff pastry (thawed)
- For Salad
- 9 fresh Strawberries (hulled and sliced)
- 4 cups Arugula (rinsed)
- 1 Tbsp Dijon mustard
- 1 Tbsp granulated sugar
- 2 Tbsps fresh Lime juice
- ¼ cup fresh Orange juice
- ¼ cup olive oil
- coarse salt (to taste)
- freshly ground Black pepper (to taste)

Preparation steps

In a skillet, set over medium-high heat, saute the asparagus tender but al dente. Season with salt and pepper.

Preheat oven to 425ºF / 220ºC. Line a baking sheet with parchment paper.

Cut puff pastry in strips about 1/2-inch wide. Wrap puff pastry around each asparagus spear.

Bake until golden brown, about 10 to 12 minutes. Divide between plates and serve with side salad.

In a large bowl, toss the sliced strawberries and arugula together. In a medium bowl, whisk mustard, sugar, lime juice, and orange juice together. Add olive oil in a slow stream, whisking constantly until well blended. Season to taste with salt and pepper. Drizzle over salad and toss. Divide between plates.
