250 grams shrimp (peeled and deveined)
200 grams Udon Noodle
salt
1 stalk Leeks
300 grams carrots
2 Tbsps sesame oil
2 tsps finely chopped ginger
125 milliliters Broth
1 Tbsp soybean oil
peppers (freshly ground)
5 Tbsps soy sauce
4 tsps Sambal oelek

Preparation steps

1.

Rinse the shrimp and pat dry. Cook the udon in boiling salted water until al dente. Drain and rinse with cold water. Rinse the leeks and cut into thin strips. Peel the carrots and cut into thin strips.

Heat the sesame oil in a wok (or large frying pan). Add the leeks and ginger, and stir-fry for 2 minutes. Remove them to a plate. Add the carrots to the pan, pour in the broth and cook for 5 minutes. Remove the carrots to a plate.

3.

Heat the soybean oil in the wok, Add the prawns and cook until just pink, about 2 minutes. Stir the vegetables, udon noodles, soy sauce and sambal into the pan, and toss until heated through. Season with salt to taste and divide between plates.
