4 medium, floury potatoes
4 Tbsps vegetable oil
cup Crème fraiche
1 Tbsp lemon juice
2 cloves garlic cloves (crushed)
2 Tbsps fresh Fresh herbs (e. g. parsley, chives etc, chopped)
½ tsp red peppercorns (crushed)

Preparation steps

1.
Heat the oven to 200°C (180°C in a fan oven), 400°F, gas 6.
2.
Brush each potato with 1 tbsp oil and wrap in aluminium foil. Bake for 30-40 minutes.
3.
Mix the creme fraiche with the lemon juice, garlic, herbs, salt and ground black pepper.
4.
Loosen the aluminium foil slightly and make a slit in the top of each potato. Pull back the skin a little and spoon some of the creme fraiche mixture over the top. Sprinkle with crushed red pepper.
