- 4 red peppers
- 2 cloves garlic cloves (thinly sliced)
- 1 large white onion (thinly sliced)
- ⅜ cup olive oil
- 2 cups Chorizo (peeled and cut into sticks)
- 1 Tbsp Nut oil

Preparation steps

Preheat the oven grill.

Grill peppers, turning them regularly until skin is black. Remove from oven and leave to cool. Then peel and remove seeds. Cut into thin strips and place in a hollow dish.

Pour over the olive oil and season. Combine the pepper strips with the garlic and onion. Cover with clingfilm and leave in a cool place.
4.
Cut chorizo into strips. Heat groundnut oil and brown the strips of chorizo. Drain on kitchen paper.
5.
Serve the marinated pepper salad and crispy chorizo together.
