- 1 tsp salt
- 1 tsp Black pepper
- 2 tsps dried oregano
- 4 Tbsps olive oil
- 3 ⅓ cups Pork loin (chopped into bite sized chunks)
- 1 onion (chopped)
- 1 red pepper (deseeded and chopped)
- 1 yellow pepper (deseeded and chopped)
- 1 sprig parsley (chopped)

Preparation steps
1.
Mix together the salt, pepper, oregano and two tablespoons of the oil. Rub the mixture into the pork pieces and leave to marinade for one hour.
2.
Heat the remaining oil in a pan and gently fry the onion until soft but not brown. Add the pork and cook over a medium heat until the meat is nearly cooked through, then add the peppers and continue to cook for two minutes.
3.
Season with salt and pepper and scatter over the parsley just before serving.
