- 2 potatoes
- 150 milliliters Vegetable broth
- 1 Red Bell pepper
- 1 yellow Bell pepper
- 1 green Bell pepper
- 1 Red onion
- 100 grams Dry sausage
- 1 Tbsp balsamic vinegar
- 150 grams mixed Lettuce
- 100 grams Herb cheese spread
- 50 grams green Olives
- 50 grams black Olives
Preparation steps

Rinse, peel and finely dice potatoes. Cook in the vegetable broth for about 15 minutes. Rinse and quarter peppers, removing the seeds and the white inner skins and chop. Peel the onion and cut into wedges. Thinly slice the cabanossi sausage.

Mix vinegar with the potato/broth mixture and let cool. Rinse and spin dry lettuce. Whip the herb cheese spread with a little potato broth until creamy. Drain the potatoes. Mix together the peppers, potatoes, onion, cabanossi and lettuce and arrange on plates. Pour the cheese sauce over it. Serve sprinkled with olives.
