- 2 yellow Bell pepper
- 125 grams Snow peas
- 1 scallion
- 100 grams Chestnut mushroom (or brown mushrooms)
- 1 Tbsp white Sesame seeds
- 2 Tbsps Pine nuts
- 2 Tbsps white balsamic vinegar
- 2 Tbsps lemon juice
- ½ tsp salt
- ½ tsp sugar
- 1 generous pinch white peppers
- 1 generous pinch medium hot Mustard
- 3 Tbsps olive oil

Preparation steps

Toast the pine nuts in dry skillet, stirring until golden brown, remove from the pan and let cool.

Rinse the peppers, halve lengthwise, remove the seeds and white ribs and cut into thin strips. Rinse the snow peas, remove the strings and blanch 1 minute in a pot of boiling salted water. Drain, rinse under cold water, drain well and halve diagonally. Rinse, trim and thinly slice the scallions. Clean the mushrooms with a damp cloth, dry and slice.
Arrange the peppers, snow peas, mushrooms and scallions on four plates. In a bowl, whisk together the vinegar, lemon juice, salt, sugar, pepper, mustard and olive oil and sprinkle over the salad. Sprinkle with pine nuts and sesame seeds.
