20 grams shiitake mushrooms (dried)
500 grams Tomatoes
1 Celery
1 onion
1 carrot
1 garlic clove
500 grams Ground meat
2 Tbsps olive oil
150 milliliters dry white wine
400 grams tubular pasta (such as rigatoni)

Preparation steps

Soak mushrooms in water according to package instrucctions. Pour soaking water through a sieve and collect the liquid. Pat the mushrooms dry and chop coarsely. Blanch tomatoes in boiling water, rinse in cold water, peel, quarter and remove seeds. Rinse celery, trim and dice into small pieces. Peel the onion and garlic. Chop the onion and finely chop the garlic. Cook ground meat in hot oil until crumbly and browned. Add celery, onion, carrots, mushrooms and garlic, sauté briefly and pour in a splash of wine and a little of the strained mushroom water. Stir occasionally and simmer about 10 minutes.

Cook the pasta in boiling salted water until al dente.

Gradually add remaining wine to meat sauce and mix in the tomatoes. Simmer about 10 minutes longer and season with salt and pepper.

Toss sauce with the drained pasta (adding a little pasta water, if needed) and serve.
