1 onion

1 stalk Celery
1 Tbsp olive oil
300 grams mixed Ground meat
1 Tbsp Tomato paste
75 milliliters Red wine
500 grams crushed Tomatoes (canned)
200 milliliters Beef broth
1 bay leaf
400 grams Spaghetti
salt
½ tsp dried oregano
freshly ground peppers
1 pinch sugar
cayenne pepper
shaved Parmesan (for serving)

Preparation steps

Rinse carrot, onion, garlic and celery, trim or peel as needed and cut into small cubes. Heat oil in a pot, saute onions until soft, add remaining diced vegetables, saute briefly and then add ground meat. Fry while stirring until meat is crumbly. Add tomato puree and red wine and simmer briefly. Add tomatoes to the pot and then add broth and bay leaf. Simmer gently for about 1 hour while stirring occasionally.

Cook spaghetti in a pot of boiling salted water until al dente. Add more broth to the sauce if needed or let simmer slightly to reach desired consistency and season with oregano, salt, pepper, sugar and cayenne pepper. Add drained pasta to the pot, mix with sauce and serve immediately sprinkled with Parmesan shavings.
