Preparation steps

Cook pasta in salted water according to package directions until al dente. Then drain, rinse in cold water and drain.

Trim, rinse and finely chop leeks and scallions. Dice bacon into cubes. Heat the olive oil and add bacon. Sauté until crisp. Add leeks and scallions and sauté 1 minute. Season with some salt and pepper. Mix with the pasta and place in a greased shallow baking dish.

Whisk eggs with milk and Parmesan. Season with salt and pepper. Pour egg mixture over the pasta and leek mixture. Bake in preheated oven at 200°C (gas mark 3-4, fan: 180°C) (approximately 400°F/convection 350°F) for 40-45 minutes.
