Ingredients

For the Pastry
1 ¼ cups flour
7 Tbsps butter
1 egg
1 tsp salt
For the Filling
3 eggs
cup milk
¾ cup cream
salt (to taste)
freshly ground Black pepper (to taste)
Nutmeg ([freshly] grated)
0.333 cup grated Gruyere
2 cups small Savoy cabbage
8 ozs smoked, cooked Bacon (diced)

Preparation steps

In a mixing bowl, combine flour, butter, egg and salt together. Knead dough until smooth. Wrap in plastic wrap and refrigerate for 30 minutes.

Preheat oven to 400º F / 200º C.

Roll the pastry out very thinly between 2 sheets of plastic wrap. Line the bottom and sides of a 10-inch / 25 cm tart pan.

Beat the eggs. In a large bowl, combine the eggs, milk, cream, salt, pepper, nutmeg, cheese, cabbage and bacon; pour into the pastry shell.
5.
Bake in the oven for 40 to 45 minutes, or until the eggs have set and the top is golden brown. Let cool for 10 minutes. Serve warm or cold.
