1 Leek (washed; trimmed and thinly sliced)
1 cup Mushrooms (cleaned and sliced)
1 cup cherry Tomatoes (washed and halved)
¼ cup Gruyere (grated)

For Potato Pastry:

In a saucepan over medium-high heat cook the potatoes in boiling salted water for about 20 minutes, or until soft. Remove from heat and cool slightly.

Using a sieve or ricer, pass the potatoes through until smooth.

In a large mixing bowl, cream the butter with the back of a wooden spoon until it is light and fluffy in texture. Add the potatoes to the butter, and stir gently. Sift the flour and baking powder over the potato mixture. Mix until dough is formed, Knead gently until smooth.

On a lightly floured surface, roll out until about 1/2-inch thick. Line the bottom and sides of a lightly greased 10.5 x 7-inch rectangular baking dish.

Preheat the oven to 400 degrees F.

In a large bowl, beat the eggs, and mix in milk, cream, salt, pepper, nutmeg, leeks, mushrooms, tomatoes, and cheese. Pour mixture into the potato pastry shell.

Bake for 45-50 minutes, until golden brown and the egg mixture has just set in the middle. Remove from oven and let cool slightly. Serve.
