1 tsp honey
3 big red Bell pepper
1 Tbsp sugar
2 Tbsps light soy sauce
2 Tbsps lemon juice
50 milliliters Chicken broth
cayenne pepper
1 handful parsley

Preparation steps

Preheat the oven to convection 200°C (approximately 400°F/convection 350°F).

Rinse and dry the chicken. Cut into quarters with a poultry shears. Season generously with salt, pepper, and paprika. Put the chicken in a roasting pan with the oil and cook 45–50 minutes in the oven. Brush the chicken with honey 20 minutes before end of cooking. For a crispy crust, increase the oven temperature somewhat. and turn on the broiler.

Wash the peppers, cut in half, remove seeds and white inner skin, and cut into small squares. Dissolve the sugar with 1 tablespoon water in a pan. Then add the diced peppers and deglaze with soy sauce, lemon juice, and chicken stock. Season with salt and cayenne pepper to taste. Let simmer briefly. Remove the chicken from the oven and put on a plate. Add the pan juices to the diced peppers. Wash the parsley, shake dry, and chop finely.

Put the chicken on warmed plates and top with the diced peppers. Sprinkle with chopped parsley to serve.
