- 1 kilogram Ox cheek
- 2 carrots
- 200 grams Green cabbage
- 1 stalk Leeks
- 4 Juniper berries
- 1 bay leaf
- 1 tsp peppercorns
- salt
- peppers (freshly ground)
Preparation steps

Boil a large pot of water. Rinse the beef cheeks and pat dry. Pour into the boiling water so that the meat is covered. Reduce the heat and simmer for about 3 hours. If necessary, skim off the foam formed.

Peel the carrot and cut into fine strips. Rinse the cabbage and cut into fine strips. Rinse and chop the leeks. Put the juniper, bay leaf and peppercorns in a spice bag and add it with the vegetables into the water with the meat after 2 hours.
