- 1 kilogram Pork cheek
- 2 onions
- 4 carrots
- 3 garlic cloves
- 2 Tbsps sunflower oil
- 2 Tbsps Tomato paste
- 400 milliliters dry Red wine
- 400 milliliters Beef stock
- salt
- ½ tsp Juniper berries
- ½ tsp peppercorns
- 1 bay leaf
- freshly ground peppers

Preparation steps

Rinse the pork cheeks and pat dry. Peel the onions, carrots and garlic. Cut the onions into wedges, dice the carrots and halve the garlic.

Sear the pork cheeks on all sides in 1 tablespoon of hot sunflower oil. Remove from the pan and add the vegetables and remaining oil. Sauté the vegetables until softened then stir in the tomato paste and deglaze with the red wine. Allow the wine to boil down by about half then add the beef stock. Return the pork cheeks to the pan. Crush the juniper berries and peppercorns in a mortar and add to the pan along with the bay leaf. Cover and let simmer for 2.5 hours, stirring occasionally and adding more beef stock if needed.

Transfer to a serving platter, season with salt and pepper and serve.
