- 500 grams Cow's mouth (thinly sliced)
- 4 scallions
- 5 Tomatoes
- 1 handful Arugula
- 1 tsp honey
- 1 tsp sharp Mustard
- 4 Tbsps White vinegar
- 5 Tbsps vegetable oil
- salt
- freshly ground peppers

Preparation steps
1.
Rinse the beef cheek in a colander and drain. Rinse the scallions, trim and cut into rings. Blanch the tomatoes, peel, quarter, remove the seeds and cut into pieces. Rinse the arugula, trim, drain and tear into small pieces.

For the dressing: Whisk the honey, mustard, vinegar and 1-2 tablespoons water together. Whisk in the oil, season with salt and pepper and toss with the remaining ingredients.
3.
Serve the salad with roasted potatoes, if desired.
