- 4 Wild duck
- salt
- freshly ground peppers
- 4 Tbsps Orange liqueur
- 6 Oranges (organic)
- 2 Tbsps Orange marmalade
- 1 Tbsp clarified butter

Preparation steps
1.
Season duck breasts with salt and pepper and drizzle with 2 tablespoons orange liqueur. Rinse oranges. Peel 1 orange very thinly and cut peel into thin strips.

Squeeze juice from 4 oranges and heat with peel, remaining liqueur and jam. Simmer down by half. Peel remaining 2 oranges thoroughly with a knife, removing all white skin, and separate segments.
3.
Heat clarified butter in a frying pan. Sear duck breasts on each side for 2 minutes. Then cook over low heat for 3-4 minutes.
4.
Boil orange sauce and add orange segments. Slice duck breasts and serve with sauce.
