2 Tbsps sunflower oil
2 tsps sugar

800 milliliters Beef broth
200 milliliters dry white wine
2 garlic cloves
1 tsp lemon juice
4 slices Whole-grain baguette
60 grams freshly grated Gruyere

Preparation steps

Peel the onions and cut into thin rings. Heat the oil in a saucepan and fry the onions for about 10-15 minutes while stirring, until soft. Season with sugar, salt and pepper and simmer for another 10 minutes, stirring occasionally, until golden brown.

Pour in the broth and the wine, bring to a boil and simmer for another 15 minutes. Peel garlic and press into the soup, season with lemon juice, salt and pepper.

Preheat the oven's broiler.

Pour the onion soup into 4 oven-safe soup bowls or crocks. Place 1 slice of the wheat baguette into each and sprinkle the cheese on top. Bake for about 5 minutes, until the cheese is melted, then serve immediately with freshly ground pepper.
