- ¾ cup roasted Cashews (roughly chopped; divided)
- 6 Tbsps butter (softened)
- 1 Tbsp Cooking oil
- 4 boneless, skinless Chicken breasts
- salt (to taste)
- freshly ground Black pepper
- 6 cups Elbow macaroni (may substitute your favorite pasta)
- 2 cups fresh Green beans (rinsed; trimmed and cut into 1-inch lengths)
Preparation steps

Place 1/2 cup cashews and butter in the bowl of a food processor. Pulse to a smooth paste.

In a medium nonstick frying pan, heat the oil over moderate heat. Season the chicken breasts with salt and pepper. Cook until nicely browned and cooked through, 4 to 5 minutes per side. Remove the chicken from the pan and let it rest for 5 minutes. Cut into bite-size pieces.

In a large pot of salted boiling water, cook the penne according to package instructions, until al dente. Add the green beans during the last 5 minutes of cooking. Drain the pasta and beans and toss with the cashew butter, chicken, and the remaining cashews. Season to taste with salt and pepper. Serve.
