- For the fish skewers
- 24 ozs firm, white fish fillets (cut into chunks)
- 1 Red onion (grated)
- 1 clove garlic cloves (crushed)
- 4 Tbsps olive oil
- 2 Tbsps lemon juice
- 2 Tbsps chopped cilantro (finely chopped)
- ½ tsp paprika
- ¼ tsp cayenne pepper
- ¼ tsp salt
- For the tomato salsa
- 6 large Tomatoes (deseeded and chopped)
- 2 green chili peppers (deseeded and finely chopped)
- 1 small onion (chopped)
- 2 dashes Tabasco sauce
- 2 cloves garlic cloves (finely chopped)
- 1 lemon (juice)
- 1 Tbsp chopped cilantro (finely chopped)
- 1 Tbsp extra virgin olive oil
- salt

If using wooden skewers, soak them in cold water for 30 minutes before using, to avoid burning.
Preparation steps

For the fish skewers: combine all the ingredients except the fish, then carefully mix with the fish. Cover and marinate for at least 2 hours.

Heat the grill.

Put the fish cubes on skewers and cook under the grill, turning often to avoid burning, until the fish is cooked and lightly browned.

For the tomato salsa: mix together all the ingredients until well combined. Leave to stand for 10 minutes.

Serve the fish skewers with a dish of tomato salsa.
