1 pc fresh ginger (about 2.5 oz)
1 Vanilla bean
18 ozs jam sugar (3:1 ratio)
1 lemon
3 Tbsps Amaretto (or almond syrup)

1 Pot, 1 Bowl, 1 Measuring cups, 1 Cutting board, 1 Large knife, 1 Small knife, 1 Tablespoon, 1 Wooden spoon, 1 Peeler, 1 Fine grater, 1 Ladle, 1 Immersion blender (optional), 4 canning jars (each about 400 ml), 1 Garlic press, 1 Kitchen towel

Preparation steps

Rinse nectarines, wipe dry, halve and remove pits.

Finely dice the nectarines or purée using an immersion blender. Place nectarines in a pot.

Peel ginger root, cut into pieces and press through a garlic press into the pot with nectarines. Halve vanilla bean lengthwise and add to fruit mixture.

Add jelling sugar to pot, mix well and let stand for 1 hour.

Bring nectarine mixture to a boil and continue to boil for 3 minutes, stirring constantly.

Squeeze juice from lemon. Add amaretto and 2 tablespoons lemon juice to the pot and cook for 1 more minute. Remove vanilla bean.

Ladle into jars, cover with lids and refrigerate for up to 2 weeks.

Tip: To preserve for longer, process jars according to manufacturer's instructions.
