- 4 maturity Nectarine
- 1 cup mustard powder (100 grams)
- 5 Tbsps Orange peel
- 1 ½ cups Cider vinegar
- 1 Tbsp Sea salt
- ½ lemon (juiced)
Preparation steps

Rinse the nectarines, remove the seeds and cut into small cubes. Cook the fruit over medium heat in a pan while stirring for about 4 minutes, until juice is released, then simmer over low heat for 5 more minutes. Mix the mustard powder with 2 1/2 cups of water and the orange peel. Pour over the nectarines, add the vinegar and salt and allow to simmer over low heat for 90 minutes.

Stir often. When the mixture is as thick as jam, remove from heat, and stir in the lemon juice. Place mixture into clean jars, seal the jars firmly and allow to cool. Store in the refrigerator.
