3 Tbsps olive oil
2 Tbsps coarse-grain Mustard
4 fish fillets (skin on)
2 cups green String bean (trimmed)
1 Zucchini (sliced)

Preparation steps

1.
Heat the oven to 200ºC (180º fan) 400ºF, gas 6.
2.
Mix together the oil and mustard, season with salt and pepper and brush over the salmon fillets.
3.
Blanch the beans and courgette slices in boiling, salted water, drain well and lay in the bottom of an ovenproof dish.
4.
Lay the salmon fillets on top of the vegetables, skin side down and cover with foil. Bake in the oven for 10 minutes then remove the foil, return the dish to the oven and bake for a further 10-15 minutes or until the salmon is cooked through.
