5 cups Spiral pasta
1 Tbsp butter
2 cups button Mushrooms (sliced)
1 green Bell pepper (seeds removed, chopped)
1 shallot (finely chopped)
2 cloves garlic cloves (finely chopped)
salt
freshly ground peppers
1 ⅔ cups cherry Tomatoes (halved)
1 ¼ cups Mozzarella (diced)
2 Tbsps canned Corn kernel
½ cup black Olives
3 Tbsps Red wine vinegar
5 Tbsps extra virgin olive oil
½ tsp Mustard
¼ cup Sour cream
2 Tbsps chopped Basil

Preparation steps

1.
Cook the pasta in a pan of boiling salted water until al dente. Drain well.
2.
Heat the butter in a frying pan and gently cook the mushrooms and chopped pepper until tender. Add the shallot and garlic and cook for 2-3 minutes until tender. Season with salt and pepper and remove from the heat.
3.
Whisk together the vinegar, mustard, salt, pepper, soured cream and oil.
4.
Stir in the cooked vegetables, tomatoes, cheese, corn, olives, basil and pasta, mixing well.
5.
Serve garnished with basil.
