- 4 Chicken breasts
- 200 grams mixed Lettuce (such as oak leaf and iceberg lettuce)
- 2 Grapefruit
- 2 Apple
- 200 grams mixed Berry (such as currants, strawberries and raspberries)
- 1 Tbsp scallions (plus more for garnish)
- 1 Tbsp chopped Basil (plus moree for garnish)
- 3 Tbsps Raspberry vinegar
- 7 Tbsps sunflower oil
- 1 tsp honey
- salt
- freshly ground peppers
Preparation steps
Rinse lettuce, spin dry and tear into pieces.
Peel grapefruit with a sharp knife and cut out whole sections. Squeeze juice from remaining pulp and set aside.
Rinse apples, remove core and cut into wedges.
Rinse berries and cut strawberries into slices.
Divide fruit, lettuce, chives and chopped basil among four plates.
Rinse the chicken breasts, pat dry and season with salt and pepper. Saute chicken in a pan with 2 tablespoons hot sunflower oil. Cook on all sides about 3-4 minutes until golden brown. Remove from heat and let stand briefly.
Mix the remaining sunflower oil with grapefruit juice, raspberry vinegar and honey. Season mixture with salt and pepper to taste.
Cut chicken breasts into strips and arrange on the salad. Drizzle dressing over salad. Garnish with more basil and serve.
