- 300 grams fresh Peas (or 150 grams frozen) (approximately 5 ounces)
- 1 Chicken breast (300 grams) (approximately 11 ounces)
- 2 teaspoons Olive oil
- Iodized salt
- 1 Shallot
- fresh Peppermint
- 50 grams non-fat Kefir
- 50 grams Button mushrooms
Rinse the peas (thaw, if frozen). Sear the chicken in the oil for 10 minutes and season with salt and pepper. Remove from the pan and keep warm. Mince the shallot and mint. Mix into the kefir and season with salt and pepper.
Trim the lettuce and tear in bite-sized pieces. Cut the mushrooms into small pieces. Cut the chicken into slices. Arrange the lettuce, chicken, mushrooms and peas on serving plates and drizzle with the kefir-mint dressing.
