1 sm head Romaine lettuce
1 handful Watercress
1 Red onion
2 ripe Avocados
2 Tbsps lemon juice
14 ozs smoked Chicken breasts
6 eggs
4 slices sourdough Bread
5 Tbsps olive oil
2 tsps medium hot Mustard
4 Tbsps Fruit Vinegar
salt

Preparation steps

1.

Rinse lettuce and watercress and spin dry, tear into smaller pieces, if desired. Peel onion and quarter lengthwise, cut into strips. Halve avocados, pit and remove pulp from shells, cut into wedges. Drizzle with lemon juice. Cut chicken breasts into strips. Combine all ingredients in a bowl, mix well.

Cook eggs for about 6 minutes until semi-soft. Rinse in cold water and cool.

Cut bread into cubes. Heat 3 tablespoons of oil in a pan and cook bread until crispy, remove from pan and let cool.

Whisk the rest of oil with mustard and vinegar, season wit salt, pepper and sugar. Peel eggs and add to salad. Add bread cubes and toss with the dressing. Season with freshly ground pepper and serve.
