- 1 shallot
- 1 tsp butter
- 8 eggs
- 80 milliliters milk
- 2 Tbsps Crème fraiche
- salt
- freshly ground peppers
- Worcestershire sauce
- 1 Tbsp freshly chopped parsley
- 200 grams frozen Peas
- 80 grams grated Cheese (such as. Parmesan)
- 12 slices smoked ham (such as Black Forest)

Preparation steps

Preheat the oven to 180°C (approximately 350°F).
Grease a 12-cup the muffin tin. Heat the butter in a skillet. Peel the shallot and saute until translucent. Remove from heat. Beat the eggs with the milk, crème fraîche and parsley and season with salt, pepper and a dash of Worcester sauce.

Stir in the peas and cheese. Line the muffin cups with the ham and pour in the egg mixture. Bake until set, 15-20 minutes. Remove from the tin and serve with fresh lettuce.
