1.
Preheat oven to 325ºF / 160°C. Lightly grease eight wells in a standard size muffin tin. Line each of the wells with ham slices.
2.
Divide peas, feta and chives evenly among each ham lined muffin well. Use a fork to lightly whisk the eggs and cream together. Season with salt and pepper to taste. Pour egg mixture evenly over peas, feta and chives.
3.
Bake for 20 minutes or until just set. Remove from oven and set aside to cool. May be served hot or chilled.
