0.333 cup unsalted butter
cup caster sugar
½ cup light brown sugar
4 ½ ozs Dark chocolate (70% cocoa solids)
1 Tbsp light corn syrup
2 eggs
1 tsp vanilla extract
1 cup all-purpose flour (scant)
2 Tbsps cocoa powder
½ tsp Baking powder
3 ½ ozs Milk chocolate (35% cocoa solids, cut into pieces)

Preparation steps

1.
Heat the oven to 180°C (160° fan) 350°F gas 4. Grease a 20cm|8" square tin and line the base with non-stick baking paper.
2.
Heat the butter, sugars, chocolate and syrup in a pan over a low heat, stirring until melted and smooth. Remove from the heat and cool.
3.
Beat together the eggs and vanilla in a mixing bowl. Whisk in the chocolate mixture.
4.
Sift in the flour, cocoa and baking powder and stir gently until blended.
5.
Spoon into the tin and sprinkle the chocolate pieces on top.
6.
Bake for about 25 minutes until the top is set, but the inside is still soft. Cool in the tin, then cut into squares when cold.
